Vegetarian pho

Pho, a traditional Vietnamese noodle soup, can be wonderfully adapted into a vegetarian version that retains all the rich flavors and comforting warmth. Here’s how to create a delicious Vegetarian Pho:

Ingredients:

  • Broth:
    • 2 large onions, peeled and halved
    • 3-inch piece of ginger, sliced
    • 4-5 star anise pods
    • 1 cinnamon stick
    • 4-5 cloves
    • 1 tablespoon coriander seeds
    • 1 teaspoon fennel seeds
    • 8 cups vegetable broth
    • 2 tablespoons soy sauce
    • 2 tablespoons hoisin sauce
    • 1 tablespoon brown sugar
    • Salt, to taste
  • Pho Noodles and Garnish:
    • 8 oz rice noodles (dried or fresh)
    • 1 cup shiitake mushrooms, sliced
    • 1 cup firm tofu, cubed
    • 2 cups bean sprouts
    • 2-3 green onions, thinly sliced
    • Fresh basil leaves
    • Fresh cilantro leaves
    • Fresh mint leaves
    • Lime wedges
    • Sriracha sauce (optional)

Instructions:

  1. Prepare the Broth:
    • Char the halved onions and ginger over an open flame or under the broiler until slightly blackened.
    • In a large pot, dry roast star anise, cinnamon stick, cloves, coriander seeds, and fennel seeds until fragrant.
    • Add the charred onions and ginger to the pot along with vegetable broth, soy sauce, hoisin sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 30-40 minutes. Season with salt to taste.
  2. Prepare the Toppings:
    • While the broth simmers, cook the rice noodles according to package instructions. Drain and set aside.
    • In a separate pan, sauté shiitake mushrooms and tofu until lightly browned and cooked through.
  3. Assemble the Pho:
    • Divide cooked noodles among serving bowls.
    • Ladle the hot broth over the noodles, ensuring each bowl gets a good amount of broth.
    • Top with sautéed mushrooms and tofu.
    • Serve with bean sprouts, green onions, basil, cilantro, mint leaves, lime wedges, and sriracha sauce on the side.
  4. Enjoy:
    • Squeeze fresh lime juice into the pho and add herbs and sprouts according to your taste.
    • Mix in sriracha for an added kick if desired.
